Fermentation

At a controlled temperature of 15-16°C, with selected yeasts with no sulfites. In this type of wine, the fermentation is interrupted drastically by lowering the temperature to 0°C as to maintain still in solution the unfermented natural sugars which then give the wine that honeyed and sweet note.
